2 cups cooked shredded chicken
1/2 cup mayonnaise
1/2 cup diced celery
1/4 cup diced red onion
1 teaspoon mustard (Dijon or yellow)
1 tablespoon lemon juice

Salt and black pepper, to taste
In a small bowl, whisk together the mayonnaise, mustard, lemon juice, and onion powder until smooth.
Place the shredded chicken in a large mixing bowl.
Add the diced celery and red onion to the bowl.
Pour the dressing over the chicken mixture.
Stir until everything is evenly combined and well coated.
Season with salt and black pepper to taste.

For a milder onion flavor, soak diced red onion in cold water for 5–10 minutes before adding.
Use rotisserie chicken for an easy shortcut.
Adjust mayo depending on how creamy you like your chicken salad.
Chill before serving for the best texture and flavor.
