Ingredients

•2 cups all-purpose flour

•2 tablespoons sugar

•2 teaspoons baking powder

•½ teaspoon baking soda

•½ teaspoon salt

•2 cups buttermilk

•2 large eggs

•¼ cup melted butter

•1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix — a few lumps are fine.

  4. Heat a skillet or griddle over medium heat and lightly grease it.

  5. Pour about ¼ cup of batter for each pancake onto the hot surface.

  6. Cook until bubbles form on the surface and the edges begin to set (about 2–3 minutes).

  7. Flip and cook for another 1–2 minutes until golden brown and cooked through.

  8. Serve warm with butter and syrup.

Notes

• Do not overmix the batter or the pancakes may turn out dense.

• Let the batter rest 5 minutes for extra fluffy buttermilk pancakes.

• If you don’t have buttermilk, substitute 1 tablespoon vinegar or lemon juice mixed with 1 cup milk. Let it sit 5 minutes before using.
