This loaded sweet potato recipe is soft, fluffy, and topped with butter, brown sugar, marshmallows, and cinnamon honey butter. A sweet and savory Texas Roadhouse copycat you can easily make at home.
4 medium sweet potatoes
4 tablespoons butter
1/4 cup brown sugar
1/2 teaspoon cinnamon
Pinch of salt
1 cup mini marshmallows (optional)
Preheat oven to 400°F.
Wash and dry your sweet potatoes thoroughly.
Pierce each potato several times with a fork.
Place on a baking sheet and bake for 45–60 minutes, until fork-tender.
Remove from oven and slice open lengthwise.
Fluff the inside gently with a fork.
Add butter, then sprinkle with brown sugar, cinnamon, and a pinch of salt.
Top with marshmallows if using.
Return to oven for 2–3 minutes, until marshmallows are soft and lightly golden.
Serve warm.
