3 sweet potatoes, peeled and sliced
1 stick butter
3/4 cup brown sugar
1 cup white sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 teaspoons vanilla extract
Fresh squeezed orange juice (from about 1 orange)
Peel and slice the sweet potatoes into even rounds.
In a large skillet over medium heat, melt the butter. Add the brown sugar, white sugar, cinnamon, nutmeg, ginger, and vanilla extract. Stir until combined and starting to become syrupy.
Add the sliced sweet potatoes to the skillet and gently stir to coat them in the syrup.
Bring to a simmer and cook for about 15–20 minutes, stirring occasionally, until the sweet potatoes are fork tender and the sauce has thickened.
Stir in the freshly squeezed orange juice.
